Summer Double Melon Cool
Ingredients:
2 tablespoons small tapioca pearls
4 cups water
1/2 cup sugar
1 cup finely diced cataloupe melon
1 cup finely diced honeydew melon
Preparations:
1. Combined tapioca and warm water. Cover in a bowl. Let stand 10 minutes. Drain and set aside.
2. Bring 4 cups water to boil. Reduce heat to low. Add tapioca and sugar. Cook, stirring occassionally for 8 to 10 minutes or until tapioca becomes translucent.
3. Remove from heat and let cool. Stir in cantaloupe and honeydew.
4. Refridgerate until chilled. Serve chilled.
